Sweet potato pancakes - tasty and quick pancakes made with whole wheat flour, perfect as breakfast/dinner. Pancakes are the easy and healthy way to sneak in some vegetables or fruits into kids diet. This sweet potato pancakes is my recent try and I made this similar towhole wheat banana pancakes. It turned out super good and was an instant hit at home!

You can give this sweet potato pancakes to your baby from 8 months as a finger food, as it's so soft and melts in mouth! Ingredients

  • Sweet potato - 1 medium sized
  • Banana - 1 small
  • Whole wheat flour - 1 cup
  • Brown sugar or Jaggery powder - 1 to 2 tbsp optional
  • Salt - a pinch
  • Butter/ghee - as needed

Instructions

  • Measurewhole wheat flour, sugar/Jaggery. Keep it ready along with other ingredients. Pressure cook the sweet potatoes with skin for 3-4 whistles in medium flame. Open the cooker once pressure released and peel the skin off from sweet potatoes, mash them nicely with a fork and keep it ready. Heat jaggery with little water in a pan and melts it completely. Strain the jaggery water using a strainer and set aside. Skip this step if using brown sugar.

  • In a bowl, add whole wheat flour, mashed sweet potatoes, mashed banana, salt and jaggery water. Mix everything well and add water to make it batter like consistency. Ensure no lumps are formed and the batter should be slightly thick. Set this aside for 15 minutes.

  • Heat a pan or tawa, add a ladle of batter to it and spread it to form a circle. Don't spread too much. Cook until brown on one side for five minutes and flip the pancake. Cook for a minute and remove from the pan. Repeat the same process for the remaining batter.

Notes:

  • For babies below one year, skip salt and sweetener.
  • Adding bananas help to make the pancakes softer and give natural sweetness. So don't skip it.
  • You could add a pinch of baking soda for older kids and adults if you want more softness.
  • Don't spread it too thin, otherwise it may stick to the tawa.
  • Always check with your pediatrician before introducing any new food.
  • Make sure that your baby is not allergic to any of the ingredients listed above before you try.

    yes can try..Wrap in aluminum foil or place inside freezer bag and freeze. If its for babies I would suggest fresh pancakes

    Hi I tried the sweet potato pancakes almost of the consistency you mentioned. Batter was thick too, used medium sized sweet potato yet it became very loose and gluey when cooked in a dish tava.

    Guess its undercooked. You should cook in low flame, if needed, keep it covered and cook. The sweet potato pancakes should be soft and a little moist but not gooey.
